Potato recipes
Potatoes are among the most versatile type of food available to us - and we Irish love our spuds! They can be baked, boiled, steamed, fried, used to add thickness to soups, fill out an otherwise meagre dinner, and of course they respond beautifully to herbs and spices of all kinds. At home, we use different potatoes depending on the time of year and treat them differently. In the summer, there is nothing nicer than a good new potato, steamed and served with either home-made mayonnaise or simply butter salt and pepper. Then as the year progresses, and potatoes develop thicker skins, we use them differently. Roast potato (par-boiled and then thrown in with a roast leg of lamb!) or just baked work really well.
