Italian Rustic mash

This recipe is great served with a simple grilled meat, such as grilled pork or lamb chops off the barbeque. It is also very simple to prepare.

Use new(ish) potatoes, where the skin is still quite thin. If using older potatoes with a thick skin, you'll need to peel them first.

Use approximately one large spud or two medium spuds per person. Wash, and peel if necessary as above).

Steam the potatoes for about 35 minutes, or until fully cooked through.

Mash the potatoes, then add good quality olive oil - approximately 5 tablespoons, some finely chopped raw garlic, and a handful of basil leaves, salt and pepper.
