Mince Pie recipe

This recipe doesnt need to mature for long, last year we made pies a couple of days after the mix was made, and they went down a treat! As the original recipe is pre-metric days, the translation into kgs and grams hasnt happened yet, although a lot of the ingredients have been tweaked to suit a lighter palate...

Ingredients:

1 lb dried apricots (available at The Real Olive co)

1 lb sultanas (ask at the Pantry for them if you need them)

1 lb raisins (ask at the Pantry for them if you need them)

1 lb mixed prunes & figs (available at The Real Olive co)

4 oz chopped almonds

8 oz finely chopped/grated apple, soaked in fresh lemon juice

8 oz of grated carrot

12 oz demerera sugar (ask at the Pantry if you want this)

8 oz vegetable suet

juice of one orange and zest of orange

juice and zest of one lemon

 

Mix all together

Add 1/4 pint of brandy (you'll have to go to your local off-licence for this!)

allow to stand for 2 hours

Fill jars and cover
