Mango salsa
- About half a mango, finely chopped (it does depend on the size of the mango!)
- A ripe avocado (not easy to get, but worth the search!) – mashed up
- Two large tomatoes (if you can find ones that taste of tomato, fantastic!) – finely chopped and with as much of the juice removed as possible
- A small onion – maybe a shallot or red onion if you can get hold of one – very finely chopped
- At least two cloves of raw garlic, finely chopped
- Chopped coriander and/or basil – about two tablespoons in total – other herbs if you can get them would include flat-leaf parsley, a little oregano
Mix all the ingredients together – the mashed avocado brings all the other chopped ingredients together – add some lemon or lime juice to liven it up, particularly if the mango is very ripe, and off you go! If you hold onto the avocado stone and pop it back into the mix, it’ll help prevent the avocado from going brown…
