Garlic, olive oil and scallion Mash

This recipe was created almost at the last minute before the Honest2Goodness appearance on Ireland AM. We needed to have a potato dish that could be reheated at the last minute, while allowing for the difficulties of doing a live demonstration. However, the end result was really great, and not just for the camera - it really tasted good as well!

Ingredients:

Golden Wonder or Record potatoes (available from The Spud Man)

1 spring onion or scallion for each large potato/2 medium potatoes - available at the vegetable stall

 A clove of garlic for each large or 2 medium potatoes (less or more depending on how much garlic you like in a dish - I like a lot!) - available at The Spud Man stall

a tablespoon or two of good olive oil - available either from The Real Olive Company or The Pantry - again this can be varied according to taste

Salt and pepper

 

Peel the potatoes and steam them for about 35 minutes

Mash the potatoes - you can stop at this point and simply store the potatoes until you are ready to finish off the dish - up to 24 hours later.

Heat the olive oil, add chopped scallions and finely chopped garlic, and heat through gently for about two minutes - dont let the heat get too hot - you dont want to burn any of the ingredients.

Add in the mashed potato and heat through, seasoning with salt and pepper. You can add extra olive oil if you like.
