Blueberry and Banana Spelt Loaf
Ingredients:
6 oz white spelt flour
3 oz brown spelt flour
1 tsp zanthan gum
1 tsp bread soda
4 oz butter
2 tablespoons honey
2 bananas (large ones)
handful of blueberries
pinch salt
125g yoghurt
Handful of mixed nuts or nuts of your choice (walnuts/hazelnuts work well)
1 egg
Method
Mix together the flour, zanthan gum, bread-soda and salt into a mixing bowl.
Melt the butter gently – don’t let it get too hot or it’ll burn. Add the honey to the melted butter and switch off the heat
Mash the banana thoroughly.
Beat the egg in a medium size bowl.
Mix the mashed bananas, the melted butter/honey, yoghurt and the egg together in the bowl, and then mix thoroughly with the dry ingredients
Finally add in the blueberries and the nuts and ensure that they are fully spread through the loaf mixture.
Place the mixture in a 2lb loaf tin and bake in the oven (180º) for about 1 hour 15 minutes.
The end result is a moist loaf which keeps for several days and freezes really well.
