Beetroot

Beetroot is widely available at the moment and I’m sure it’s in every home delivered organic vegetable box. Beetroot is a great source of fibre, contains vitamin A, B1, B2, B6, vitamin C. Beetroot juice has been shown to lower blood pressure. The leaves steam like spinach or chard. It’s a delicious vegetable but not many know how to cook it.
When it is small it is great roasted in the oven. I usually boil it or grate it into a carrot salad or tzatsiki or make a very delicious Chocolate and Beetroot Cake.
My children will eat 2 whole beetroots when it is warm and just out of the pot and sprinkled with brown rice vinegar. It is an easy way to introduce children to the flavour of beetroot.
